The garden is full of healthy veggies and the kids are heading back to school. Here are three great Summer Salad ideas to help you take advantage of all of your garden bounty. You will save precious time and send the kids off with a healthy delicious full meal salad. Not just for kids these will travel to the office just as well. Pack the dressing separately and put in non breakable containers for younger children.
If you are Vegetarian/Vegan or just don’t like shrimp substitute chicken or grilled Tofu for the shrimp. and Vegan cheese for the Feta. All good choices. If you are growing your own produce use what you have, the recipes are flexible just make it colorful. I love salads and personally eat a big one every day and toss in whatever I have in the fridge. You really can’t do this wrong. Experiment.
